First of all, why would you want to install a previous version of Chrome, especially one as old as before 3.0.195.38? What old feature are you missing? Perhaps the old New Tab page?
But if you install an old version, you will have to remove the Chrome update tasks from your Windows Scheduled Tasks and/or delete the Google update.exe's from:
"C:\Documents and Settings\<username>\Local Settings\Application Data\Google\Update\GoogleUpdate.exe"
"C:\Program Files\Google\Update\GoogleUpdate.exe"
Otherwise the updates will eventually run and your old version will automatically update.
Perhaps a potable version would suit you better.

you could also download the channel changer and switch to a channel ur not using.
so if you have the stable version installed, you could run the channel changer, change it to beta or dev channel, and it wont update automatically.
im using the dev channel... and when dll's were only available for themes i had the channel on stable so that it wouldnt update and i could keep the theme i had. then when an updated one was released for the newer version i would update chrome manually.

That's just it people, it doesn't seem to be stable on my end it keeps crashing and it doesn't restore the windows on startup after a crash, my history is even gone. For that I'll install the one that was stable before 3.0.195.38 on my computer. For me it hasn't been stable since then just crashes after crashes. I have 2 computers 1 I run beta and unstable programs to test and my main which is this one. I prefer stable programs on here. Both are HP computers Pen.4 dual core processors 3 gigs of memory on both nvidia graphics updated drivers. nothing new has gone on in here except the update and that didn't go well.
try running the dev Chrome;
although it says dev, it's pretty stable
